What are your favorite things about summer? For our family it’s swimming, boating, riding bikes and of course eating lots of ice cream! I recently picked up this ice cream maker from Walmart and it has been the best purchase. With ice cream being my kids’ treat of choice it’s been getting a lot of use!
Today we decided to give homemade ice cream sandwiches a try! We used store bought cookies for the sake of time but this would be amazing with homemade chocolate chip cookies! My favorite recipe can be found in this cookbook.
We decided to do a spin on regular ice cream sandwiches and make them with chocolate ice cream. It was delicious and super easy to make, here’s the recipe we used.
Simple Chocolate Ice Cream
In the bowl of you stand mixer combine the following:
- 3/4 cup cocoa powder, sifted
- 1/2 granulated sugar
- 1/3 cup packed brown sugar
- pinch of salt
Wisk all the dry ingredients together and then slowly add the following while the mixer is on the low speed setting. This can also be done with a hand mixer and a bowl.
- 1 cup whole milk
- 2 cups heavy cream
- 1/2 tablespoon pure vanilla extract
Let this sit in the refrigerator for 1-2 hours or overnight. When you’re ready follow the directions on the ice cream maker to easily make your very own homemade ice cream in about 20 mins!!
After the ice cream is finished you will take 1 scoop of ice cream and smoosh it between 2 chocolate chip cookies. I put them on a baking sheet and set them in the freezer for about 15 mins to set up. They turned out great and to make things just a bit more summery I served them in my new adorable poke-a-dot dishes also from Walmart! They truly have some of the cutest and affordable options in their home section! This was the perfect treat to enjoy as a family on a hot summer day! Who’d ready for some ice cream!!
